Chef Rosendo Avila was born in Isla Holbox in 1968, family of the original founders of Holbox, blood relatives of European pirates who landed on the shores of the Caribbean Islands. Rosendo learned to cook by observing the local Holboñena women create local dishes and then went on to further his culinary experiance in Switzerland and Italy, where he worked as a Chef. The result is a completely original combination of Holboxeño and Mediteranean flavors.
